Swedish Almond Cake Recipe

I’m turning 30. Yikes! Let me just say, it is more scary than I thought it would be, but I do not feel 30 at all. More like 22. I should probably grow up sometime soon. My husband and I are celebrating in Las Vegas, one of my favorite places. I love to party and Vegas is so fun, has great food and it’s beautiful! My parents are watching our son and I always bring them a baked treat. I wanted to make something that wouldn’t take forever and they could have either for breakfast or as a dessert. This cake is super easyΒ to make and is delicious with a cup of coffee or tea. Here we go…

What you will need:

9 inch springform pan

1 cup granulated sugar
1Β teaspoon almond extract
1 teaspoon vanilla extract
Zest from 1 lemon
2 eggs
1/4 teaspoon salt
1 cup flour
1/2 cup melted, unsalted butter
2 tablespoons sliced almonds
1 tablespoon coarse sugar

Preheat oven to 350 degrees fahrenheit.

In a large bowl (or bowl of your electric mixer), blend sugar, salt, almond and vanilla extracts, and lemon zest. Beat in eggs, one at a time. Mix in the flour and melted butter until everything is incorporated. Pour batter into greased and floured pan. Sprinkle the top with sliced almonds and coarse sugar. Note:Β I did not have coarse sugar so I did not use. I just sprinkled with powdered sugar once cake was done and cooled. Bake for about 25 minutes. Remove from oven and let cool on wire rack for 10 minutes before releasing the sides. Enjoy!
