I just saw Frozen. I know, finally, right?! But I’m in love and I cracked up in the song, “For the First Time in Forever,” when Anna sings “I wanna stuff some chocolate in my faaace!” Because, who doesn’t just want to do that sometimes? So here we go, chocolate chocolate chip cookies. I made double chocolate jumbo cookies before and these are very similar. Just not jumbo or with dark chocolate. So let’s get our cookie sheets out and get going…
What you will need:
Cookie sheet lined with parchment
For the cookie dough:
12 oz. semi-sweet chocolate chips, divided
3/4 cup granulated sugar
1/2 cup light brown sugar
1 cup unsalted butter, room temperature
2 teaspoons vanilla extract
2 eggs
2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
To make the cookies:
Preheat oven to 375 degrees fahrenheit. In a microwave-safe bowl, melt 1/2 cup chocolate chips. Stir and set aside. In another bowl, whish together flour, cocoa powder, baking soda and salt. Set aside.
In a large bowl (or bowl of your electic mixer), beat butter, sugars and vanilla until creamy. Beat in eggs until light and fluffy. Mix in cooled melted chocolate. Mix in dry ingredients until combined. Stir in remaining chocolate chips.
Shape dough into 2 inch balls and place on cookie sheet. Bake for 9-11 minutes or until set and just beginning to crack on the surface. Let cool completely on wire rack. Enjoy!
