My husband has been in Toronto at a work conference the past 5 days. To me, a stay at home mom of a 2 year old boy, it has felt like a month! So to do something special for him upon his return today, I’m cooking a nice dinner and made these peanut butter cookies for dessert! He loves, I mean, LOVES peanut butter. And these cookies could not be any easier. 3 ingredients that you should already have on hand. And this recipe doesn’t make a ton so you won’t have 2 dozen cookies staring you down the next few days 😉 So let’s go bake!!
What you will need:
Cookie sheet lined with parchment paper
1 egg
1 cup granulated sugar
1 cup creamy peanut butter
I got 14 cookies. If you need more, just double the recipe!
Preheat oven to 350 degrees Fahrenheit. In a bowl, mix together all ingredients. If needed, refrigerate dough for 10-15 minutes. Make 1-2 inch balls and place on cookie sheet. Make criss cross patterns with the tines of a fork on each cookie, pressing down gently. Bake for about 12 minutes. Cool for 2 minutes on cookie sheet before transferring to a wire rack. Enjoy!
