Chicken Tetrazzini

A childhood favorite! My sister and I would always beg my mom to make this for our birthday dinners. It is so delicious and comforting and unhealthy and just plain old good! You do have to plan ahead to make this because it takes longer than a typical weekday meal. But once you make it, you won’t turn back and it will become your family favorite, too! The recipe below can easily be doubled as well if you are feeding more people, but this one will feed 4 people easily.

So, turn on those ovens and let’s go!

What you will need:

8 x 8 inch bake dish, greased

8 oz. linguini, cooked
2 chicken breasts, cooked and cut into small bite sized pieces
1/4 cup butter, softened
1 cup sour cream
1 can cream of chicken soup (or cream of mushroom)
1/4 cup chicken broth
1 tablespoon grated parmesan cheese
1 cup shredded mozzarella cheese
Salt and pepper for seasoning

Preheat oven to 350 degrees fahrenheit. Cook the noodles according to box instructions and set aside. While noodles are cooking, cook the chicken until no longer pink in the center. Cut into small bite sized pieces.

In a large bowl, mix together the chicken, butter, sour cream, soup, chicken broth and salt and pepper to taste until well combined. Stir in cooked pasta. Pour into prepared bake dish. Sprinkle parmesan cheese and mozzarella cheese on top. Bake for about 40 minutes. Note: If you doubled the recipe, it may need to bake for 5-10 minutes more.

Serve immediately and enjoy! Store covered in the fridge.

Nieman Marcus Dip

I’m not sure why this is called Nieman Marcus Dip, I found the recipe online and just went with it. Perhaps they sell this there? My mom calls Nieman Marcus “Needless Markup” because everything is so expensive. LOL! So hilarious. This dip, however, is delicious and not expensive at all. I made it for Easter and it was a hit! So easy to make, just 5 ingredients, 6 with crackers.

I had a great Easter with my family at my parents house. I actually like Easter better than Christmas 🙂 The weather is nicer, and you still get delicious baked goods and candy. And going on an egg hunt is the best. So I hope you all had a great Easter weekend, too!

Now, on to the recipe…

What you will need:

8 oz. cheddar cheese
2 green onions (more or less to taste)
1 1/2 cups mayonaise
1/2 cup slivered almonds
3 oz. bacon bits
Crackers (I Used Ritz and Townhouse Flatbread crisps)

Note: Feel free to get already shredded cheese, but in my opinion, getting a block of cheese tastes better 😉

Shred the cheese and put in a large bowl. Thinly slice the onions and place in the bowl with the cheese. Combine all the other ingredients in the bowl and stir until everything is combined. Pour into a nice serving bowl with crackers on the side and enjoy!

How simple is that?!

Bacon Ranch Pinwheels

I feel like I haven’t been around much! I’m so sorry. And I apologize again for this post not being something sweet or baked! But we can all use some savory right? This past weekend I was at my brother in laws lake house for our annual cousin party. We all look forward to this weekend all year long. We always have a blast! I brought these pinwheels as an appetizer and they were a big hit. Gone. They are really easy and this recipe makes a lot. So here we go!

What you will need:

6-8 (10 inch) flour tortillas
8 oz. cream cheese, softened
16 oz. sour cream
1 packet of dry Ranch dressing (2 tablespoons)
1/2 cup bacon bits (I made my own but you could also just get store bought)
Shredded cheddar cheese

In a large bowl, beat together cream cheese, sour cream and Ranch dressing mix until combined. Thinly spread over a tortilla, making sure not to go all the way to the sides. Sprinkle bacon bits on top and shredded cheese. Tightly roll. Continue until you use up all the ingredients. Place all the rolls in an airtight container and refrigerate for at least 1 hour. Cut into 1 inch pinwheels. Enjoy!


Quick and Easy Drop Biscuits Recipe

At 4:30 pm I knew we were going to have pasta for dinner, but I wanted some homemade bread, too! I just can’t stay out of the kitchen 😉 However, kneading dough and waiting for it to rise takes way too long, I didn’t have time. So, I found this quick and very easy recipe for drop biscuits. A little something savory for the not so sweet teeth people (?). Whatever. Here we go…

What you will need:

Baking sheet lined with parchment paper

For the dough:

2 cups all-purpose flour
4 teaspoons baking powder
1/2 cup unsalted butter, softened
3/4 cup milk
1 egg
Salt to taste

Preheat oven to 350 degrees fahrenheit. In a large bowl, whisk together flour, baking powder and salt. Mix in the softened butter until crumbly (I just used a spoon). Add egg and milk and stir until everything is combined. Drop by spoonfuls onto lined baking sheet and bake for about 20-25 minutes, or until just starting to brown. Enjoy right out of the oven!

Tip: After dropping half the dough onto the baking sheet, I added a handful of shredded cheddar cheese and a tablespoon of chives into the remaining dough. In the picture below, the left half are plain, and the right are the cheddar and chive biscuits. Get creative and add anything you like!
